I started to use the Ubuntu OS for the first time around 5 months ago and Ive only used 18.04, should I go to 20.04? I only use my 2 servers for educational purposes.

You can use Ubuntu 18.04, there is no issue with that for the moment. You can just consider that the EOL (end of life) is April 2023.
The end of life of software means the software has reached the end of its predefined support period. Beyond this date, the software won’t get any feature, maintenance or security updates.
You may continue using the software past its end of life date but at your own risk. If there are security vulnerabilities, your system and data will be at risk.

In my eyes, yes, you should switch to Ubuntu 20.04. There are multiple reasons behind this which @alexdo has stated but I noticed you wanted a personal opinion. Mine is 20.04 all the way as opposed to 18.04. It has a lot more functionality and of course, it’s the current technology that’s being used in terms of Ubuntu OS.
If that’s not enough, you mentioned you are using the Droplets for educational purposes. That should be enough to sway you to use 20.04. You’ll need to use such technologies rather than older ones.
All in all, it’s always best to move with new releases when we talk to OS like Ubuntu, CentOS, Debian and so on.
